PESTO REPURPOSED

A happy eureka moment occurred today at lunch when I discovered not only had I forgotten dressing for my simple salad lunch, but I’d also left a small amount of pesto in the fridge from lunch on Monday. The cold parsley-almond-garlic concoction was the perfect addition to my romaine, chickpea, and bean sprout salad, and it looked cute too!
